Creamy Fried Confetti Corn

As promised- the recipe for the Creamy Fried Confetti Corn that I made yesterday:

Creamy Fried Confetti Corn

  • 8 bacon slices, chopped
  • 4 cups fresh sweet corn kernels (about 8 ears)
  • 1 medium-size white onion, chopped
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 (8-ounce) package cream cheese, cubed
  • 1/2 cup half-and-half
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
Cook chopped bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving drippings in skillet. Set bacon aside.
Sauté corn, onion, and bell peppers in hot drippings in skillet over medium-high heat 6 minutes or until tender. Add cream cheese and half-and-half, stirring until cream cheese melts. Stir in sugar, salt, and pepper. Top with bacon.

*Over the years as I have made this dish I've made a few alterations to the recipe.
1. I prepare about twice as much bacon as the recipe calls for.
2. I only saute' the onions and peppers (not the corn) in the bacon drippings. When they are tender I add the cream cheese and half-and-half. When the cream cheese has melted I stir the corn in. Then I stir about half of the bacon in.
3. I then transfer the entire mixture to a 9x13 baking dish & bake at 375 for 30-45 minutes.
5. The last 5 minutes of baking time I take it out and top it with the rest of the bacon.

**When I did this yesterday I didn't have time to stick it in the oven & also had to transport it to a party, so I put it in a crockpot (I have one that the lid seals/locks down) and added the bacon when we got to the party.

Click, click, click - I was so camera-happy today!

Being inspired by this post, I decided I really should take pictures of some of my GREAT finds from last Saturday's city-wide garage sales in Grant-

I found these great basket planters for $10 a piece... I wouldn't call these a *true* garage sale item as they were being sold retail by someone who was trying to reduce inventory.... still, I think I got a good deal on them.



and this set of 8 Pepsi-Cola glasses with a matching pitcher- I've always seen the Coca-Cola glasses, but I don't like Coke- and have always wanted a set that says Pepsi... who knew I'd find it at a garage sale!?!! :) I'm so pumped about this!
I also got an ice cream maker for $5, but I'll spare you the photo as it just isn't as aesthetic as my other treasures!

A Queen-sized quilt for $5... had to talk them down from $10 b/c they were trying to sell 2 icky throw pillows with it that I had absolutely no use for... :)

A great day outside ...

I had big productive plans for today- clean house, paint the guest room, perhaps work a little bit on my landscaping project that has been sorely neglected for well over two weeks, plant a tree.....

But a little walk out into the back yard with my camera changed the whole day. One click turned into another, and then another... First there was the turtle in the wading pool-


Then the wild roses in bloom -

And since I had my camera in tow and had to feed/water the chickens and the ducks, well, I decided to take pictures of them too-

Smokey
Taz- was completely wild when we got her, but now she's the one doing figure-8s around my ankles every-stinking-time I step out the door! Also- last spring she got stepped on by a cow, broke her butt in 3 places & lost most of her tail.

Sneezy- is 2 years old and had a cold for the first 18 months of his life. I finally hauled him into the vet and told them to keep him there and treat him until he was better. That worked out well! :)

There are lots of others I didn't get on camera... Bandit, Brewster, Lucky, Mystery, Princess, Cricket .... and 13 un-named kittens!

I also managed to snap a shot of Dixie the puppy -
I found myself on a big blanket in the front yard with my girls, my cats, my puppy & my camera! Oh, did we have fun!

butter-fingers-toes

Today my 5-year-old daughter shared the following with me: (in reference to eating an english muffin w/ butter on it) "Mommy, I like to bite into it and suck the butter down to my toes- it helps me jump higher!"
